Edible Birthday Cookie Dough (Vegan)

June is Pride month, so we are celebrating with this rainbow sprinkle cookie dough! It is super easy to make, is entirely vegan, and tastes like a birthday cake!

Ingredients You Will Need…

  • Flour: There is a chance that flour can have salmonella in it, so to avoid getting sick from eating uncooked cookie dough, it is important to heat treat the flour first. Spread the flour onto a rimmed baking sheet and bake at 300F for 8 minutes.

  • Vegan Butter: This ingredient gives structure to the cookie dough, however, if you prefer not to use vegan butter, you can try using coconut oil or margarine instead. I haven’t tried it yet, so let me know how it works out!

  • Sugar: This recipe calls for granulated sugar AND icing sugar. While testing this recipe, I found that the icing sugar gave it more of a cake-like taste.

  • Salt: Every good cookie recipe has a dash of salt in it!

  • Milk: I usually prefer to use oat milk while baking, however any plant-based milk will work!

  • Vanilla: To add some more sweetness!

  • Sprinkles: You can’t have birthday cake cookie dough without the sprinkles, right?!

Can I Bake This Cookie Dough?

You can definitely try! I haven’t tried it yet, but if I do in the future I will edit this post to let you know. There are no ingredients like baking soda or baking powder that will help the cookies rise, therefore they will be very flat and crispy when cooked.

Edible Birthday Cookie Dough


Time: 20 min

Serves: 8

Ingredients:

  • 1 1/4 cup flour (heat treated- this is an important step, see above note)

  • ½ cup vegan butter, softened

  • ⅓ cup granulated sugar

  • 1/4 cup icing sugar

  • ¼ tsp salt

  • 1 ½ tbsp milk

  • 1 tsp vanilla

  • 1/3 cup sprinkles

How to Make:

  1. Add butter and granulated sugar to a stand mixer and whip together until creamy. Mix in the salt.

  2. Add the milk and vanilla extract. Then blend in the flour and icing sugar until it is the texture of cookie dough.

  3. Use a spatula to fold in the sprinkles. Take a cookie scoop and place into mini jars or onto small plates to serve, enjoy!
