Matcha Coconut Nice Cream


Time: 10 min

Serves: 2

Ingredients:

  • 3-4 frozen bananas

  • 1 tsp vanilla extract

  • 2 tbsp matcha powder

  • 1 tbsp honey **omit if vegan or substitute for maple syrup

  • 4 tbsp coconut milk

  • 4 tbsp toasted coconut shavings (2 tbsp in the nice cream, 2 tbsp as a topping)

  • Raspberries (as a topping)

How to Make:

  1. Toast 2 tbsp of coconut shavings in a pan on low heat until golden brown.

  2. Place all ingredients (except raspberries) in a high speed blender and blend until smooth and creamy. Scrape down the sides of the blender as needed.

  3. Serve in Coconut Bowls and top with raspberries, a drizzle of honey or maple syrup and the 2 tbsps of extra coconut. Enjoy!
