Matcha Coconut Nice Cream

Serves: 2
Ingredients:
3-4 frozen bananas
1 tsp vanilla extract
2 tbsp matcha powder
1 tbsp honey **omit if vegan or substitute for maple syrup
4 tbsp coconut milk
4 tbsp toasted coconut shavings (2 tbsp in the nice cream, 2 tbsp as a topping)
Raspberries (as a topping)
How to Make:
Toast 2 tbsp of coconut shavings in a pan on low heat until golden brown.
Place all ingredients (except raspberries) in a high speed blender and blend until smooth and creamy. Scrape down the sides of the blender as needed.
Serve in Coconut Bowls and top with raspberries, a drizzle of honey or maple syrup and the 2 tbsps of extra coconut. Enjoy!
