Vegan Cinnamon Loaf Cake
Say hello to my most requested recipe: Cinnamon Loaf Cake. It’s fluffy, sweet, and will make your house smell like the sweet scent of cinnamon!
How to make vegan buttermilk:
I used vegan buttermilk in this recipe to give this loaf cake a softer texture, and a layered flavour! Vegan buttermilk is made with two ingredients: plant-based milk and lemon juice. It is super simple to make! In this recipe, all you need to do is mix together 1 cup of plant-based milk (we used oat milk) and 1 tablespoon of lemon juice in a small bowl. Place the bowl in the fridge to set for at least 10 minutes while you prepare the rest of this loaf cake recipe.

Ingredients:
3/4 cup vegan butter
1/2 cup sugar
1/2 cup brown sugar
2 flax egg (2 tbsp flaxseed + 6 tbsp water)
1 tbsp vanilla
2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 cup vegan buttermilk (1 cup milk + 1 tbsp lemon juice)
For topping:
2 tbsp + 2 tsp brown sugar
6 tbsps all purpose flour
1 tsp cinnamon
3 tbsp vegan butter
For glaze:1/2 cup powdered sugar
1/2 teaspoon vanilla
1/2 tbsp butter, melted
1 1/2 tbsp milk
pinch of salt
How to Make:
Preheat the oven to 350F and grease a loaf pan with vegan butter.
In a bowl, mix all of the ingredients for the topping. Prepare the flax egg and vegan buttermilk and place in the fridge in the meantime.
Using a stand mixer, whisk together the butter and sugars until fully combined.
Add the flax egg and vanilla and beat until smooth.
In a separate bowl mix together the flour, baking powder, baking soda, cinnamon, and salt.
Add half of the dry ingredients into the wet ingredients. Then mix in the vegan buttermilk mixture. Mix in the remaining dry ingredients.
Spoon the batter into the loaf pan and top with the cinnamon sugar topping.
Bake for 45 minutes or until a toothpick inserted in the middle comes out clean. Prepare the glaze in a small bowl by whisking all of the ingredients together.
When the bread is cool, drizzle with the glaze, slice the cake, and enjoy!
