Vegan S’mores Blondies
Somehow, it’s already the end of August, or as I like to call it, s’more season! Last August I made a recipe for S’mores Sliders, the perfect treat to level up your dessert while camping. This year, I have a recipe for when you are craving that nostalgic taste at home! These blondies are chewy, soft, and have all of your favourite flavours from the classic s’more.
Ingredients You Will Need…
Vegan Butter: This is what gives these blondies a cake like, airy texture. My favourite brand for baking is Earth Balance!
Brown Sugar: I found that brown sugar gave these bars a slightly more toasted taste!
Flax Seed: This recipe calls for two flax eggs, which means you will need to mix two tbsp of flaxseed with six tbsp of water and let it set in the fridge for 10 minutes.
Vanilla: I don’t think I’ve ever baked something without adding a little splash of vanilla!
Baking Powder: This helps the blondies rise while baking.
Salt: To balance out the sweetness!
All Purpose Flour: I have found that all purpose flour works best in this recipe!
Graham Cracker Crumbs: My favourite brand is HoneyMaid P’tite Abeille but this will depend on whether you eat honey or not.

Vegan S’mores Blondies
Time: 1 hr
Serves: 9
Ingredients:
½ cup vegan butter, melted
1 cup brown sugar
2 flax eggs (2 tbsp flax seed, 6 tbsp water)
1 tbsp vanilla
¼ teaspoon baking powder
1/2 teaspoon cinnamon
½ teaspoon salt
1 cup all purpose flour
½ cup graham cracker crumbs
2 cups marshmallows, cut into small pieces or use mini marshmallows
½ cup chocolate chips
Instructions:
Preheat the oven to 350F and line an 8x8 pan with parchment paper. Prepare the flax egg, by mixing the flaxseed and water and placing it in the fridge.
In a large bowl, whisk the melted butter and brown sugar. Add the flax egg and vanilla and mix together.
In another bowl, stir together the baking powder, cinnamon, salt, flour, and graham cracker crumbs. Then pour into the larger bowl and mix until there are no more pockets of flour.
Pour into the prepared pan and bake for 30 minutes or until a toothpick comes out clean when it is inserted into the middle of the blondies.
Pour the marshmallows on top of the blondies in an even layer and use a kitchen torch to roast the marshmallows. If you don’t have a kitchen torch, you can place the blondies in the oven on the broil setting for 5-10 minutes until golden brown.
Melt the chocolate chips in the microwave for 30 seconds, stir, and repeat until melted. Drizzle over the blondies. Enjoy!
